The article examines the vocabulary related to baked products of the Dargin traditional cuisine. The purpose of the article is to describe the lexical units of baking in several dialects, and to reveal the peculiarities of the vocabulary. The relevance of the study is related to the changes in nowadays baking processes and the forgetting of some traditional forms. The article describes the vocabulary used in Dargwa dialects, which reflects the main stages of the process (preparation of the dough and the oven, and the baking process), as well as the items associated with baking bread, the types of baked goods, and other characteristics of bread products. In the traditional Dargwa diet, bread products played a significant role. Dargwa bread products are divided into two categories: those without fillings and those with fillings. The bread products without fillings include chureks, loaves, buns, and flatbreads, as well as sweet breads and treats. Pastries with fillings varied greatly in shape, type of dough, and filling composition. The same variety is noted in the names of products. The most common names of baked goods with a filling are chudu (pie) and kyaža (baked bun). Dargins have at least fifty names of different types of chudu.
